Potato Candy

1 potato -- medium, white
1 box confectioner's sugar -- 10X
1 jar peanut butter
Boil potato. Peel when cool enough to barely handle, but still hot. Mash potato into very small bits by hand. Begin to add sugar, sifting over potato in large bowl. Stir as sugar is added. Potato will become soupy. The hotter the potato the more sugar it will take. Keep adding sugar. Finally the mix will become doughy. Roll dough out on waxed paper with rolling pin. Spread with peanut butter. Roll up like a jelly roll. Slice into 1/2 inch thick slices. When cool, is ready to eat. Once you've tried this recipe you won't be able to keep from nibbling the freshly made pieces. Once your family discovers you are making this look out for elbows as hands sneak in to grab pieces as you cut them. To store, cover in tupperware or aluminum foil as the candy will become crumbly if it dries out. Tal makes this using a very hot potato and adds 4 boxes of powdered sugar.
