BREAD AND BUTTER PICKLES

Bread and Butter Pickles

Servings : 60

30 cucumbers -- medium
8 onions -- white, large
2 green bell peppers -- large
5 cups apple cider vinegar
1 teaspoon tumeric
1/2 cup salt
5 cups sugar
1/2 teaspoon celery seed

Slice cucumbers thin. Chop onions and peppers. Combine with salt. Let stand three hours. Drain well. Mix sugar, vinegar and spices and bring to a boil. Add cucumbers, onions and peppers. Heat thru but do not boil. Can in jars and process.
May add pimentos or red bell peppers for color.
